About the station
The Hatessa Station is one of eight processing facilities operated by Alo Coffee. Together with the Main and Chilaka stations, it is located in the Bensa district in the Sidama region. It is deliberately located in close proximity to the surrounding plantations so that the freshly harvested cherries can be processed without any loss of time.
About the processing process
Only fully ripe coffee cherries are picked by hand for this coffee. They are then sorted for the first time at the Hatessa Station, followed by a secondary visual inspection, during which overripe or underdeveloped fruits are sorted out. This ensures a high, consistent quality.
The first 72 hours are critical in natural processing: the cherries are turned every two to three hours on the drying beds to prevent mold growth and uneven fermentation. Both can otherwise produce undesirable flavors reminiscent of acetic acid or overfermented fruit.
During the 14–18-day drying period, the cherries are spread out in a thin layer of 3–5 cm to ensure optimal air circulation and even dehydration until a residual moisture content of 10–12% is reached.
About the variety
The variety used, 74158, originates from the Ethiopian breeding program of the 1970s. It was selected in Sidama and combines resilience with exceptional cup quality. Its clear, complex fruit and floral notes are typical and make it one of Ethiopia's most popular varieties.
