About the station
The Gedeb Woreda district is located on the southernmost edge of the famous Yirgacheffe region, at an average altitude of over 2,000 meters, which is significantly higher than Yirgacheffe town (~1,700 meters). The coffee trees are between 10 and 20 years old, which gives them a qualitative advantage over older trees in other parts of Yirgacheffe. The beans come from the Guzguz Tatatu Washing Station, which was founded in 2020. The station processes around 1,000 tons of coffee cherries annually, yielding approximately 150 tons of high-quality coffee.
About the processing
The cherries were selectively harvested at optimal ripeness during the 2024/25 season. After pulping, the beans undergo 36 hours of underwater fermentation. This is followed by 15 days of drying on raised drying beds until a residual moisture content of around 12% is reached. The beans are then stored in parchment and hulled in Addis Ababa before export.

An heirloom variety traditionally found in Ethiopia is used. These old, locally adapted varieties are known for their complex flavors, floral nuances, and pronounced acidity. Heirloom varieties usually consist of genetically diverse lines that have adapted over centuries to the altitude, soil, and climate of the Gedeb region.
