About the farm
The Volcán Azul farm is located in the West Valley of Costa Rica, at the foot of the Poás volcano. Alejo Castro Kahle is the fifth generation to continue the tradition of coffee cultivation. The farm adheres to strict quality standards and sustainable practices and is committed to protecting the rainforest and preserving biodiversity.
About the processing
The coffee cherries come from the Lima plot, which is shaded by native rainforest trees. The Brix value is used to determine the optimal time for harvesting. After floating and washing, the cherries undergo a five-day fermentation in tanks under direct sunlight at 25–30°C. They are then dried for eleven days on raised drying beds before undergoing a final eight-hour drying process in mechanical dryers.
About the variety
The Villa Sarchi variety used is a natural dwarf mutation of Bourbon coffee, which was discovered in Alajuela, Costa Rica, in the 1950s and 1960s. It thrives particularly well at higher altitudes and is resistant to strong winds.
