About the producer
Pepe Jijon runs the famous Finca Soledad and his son Jose has been living and learning the art of coffee there since the beginning. Together with Francisco's farm, San Pedro and Soledad form the Fincas del Putushio — a pair of sister farms that are taking the Jijon family's coffee production to the next level. September proudly supports the hard work of Jose and Pepe, as the small farm has limited production—we are grateful for this batch.
About the processing
The traditional washing process begins with harvesting, followed by pulping on the same day. This is followed by a night's rest in dry parchment. The beans are then washed with fresh spring water and dried for 30 days on raised, covered drying beds.
About the variety
Mejorado is now considered Ecuador's jewel. Although the name is reminiscent of Typica, Typica Mejorado is not related to this variety. It is now known to be a cross-pollination of Bourbon and Ethiopian Landrace.
